Jolly Roger Orange Bread
Ingredients
- 4 ½ cups flour
- 2 ¼ tablespoons baking powder
- 2 cups sugar
- 1 ½ teaspoons salt
- Zest of 2 small oranges
- ½ teaspoon soda
- ¾ cup oil
- ¼ cup white corn syrup
- 4 eggs
- 1 ½ tablespoons orange extract
- Few drops of yellow food color
- Few drops of orange food color
- Juice of 2 oranges
- Evaporated milk
Instructions
- Combine flour, baking powder, sugar, and salt in a large mixing bowl. Mix well. Combine orange zest and soda in a small bowl. Let stand
- for 5 minutes. Add to flour mixture. Mix well.
- Combine oil, corn syrup, eggs, orange extract, yellow and orange food color in another large bowl. Combine orange juice with evaporated milk to make 2 1/2 cups and add to the orange mixture. Mix well until blended.
- Slowly add the liquid mixture to the flour mixture. Mix well until blended. Pour into 2 (9×5-inch) loaf pans. Bake at 350 degrees for about 1 hour, or until a wooden toothpick inserted in the center comes out clean. Makes 2 loaves.
Notes
Special Note: I have not changed anything in this recipe. When I make it I will NOT use the food coloring and will replace the 2 cups of sugar with 1 cup of dark brown sugar.
