Mango Sticky Rice
Ingredients
- 1-1/2 cups sweet rice
- 1 can coconut cream
- ⅓ cup dark brown sugar
- 1 mango cubed or sliced
Instructions
- Add sticky rice and enough water to completely cover in a bowl and let sit at least 8 hours, if not overnight. Watch to see if you need to add more water as it soaks.
- In double boiler that is a steamer (holes in the bottom) add 1-1/2” of water to the bottom and the soaked rice to the top. Cover with a dishcloth (absorbs water) and cover with a lid. Bring to a gentle boil and let cook 20 minutes. When done, dispose of the remaining water and put the rice in a medium-sized bowl. Add the coconut cream and sugar. Mix well. It should be a bit soupy, but don’t worry it will absorb into the rice as it cools.
- Slice or cube your mango and serve with the rice. I prefer mine still hot and a bit soupy.
