I LOVE food and I LOVE to cook! For me, it is a science experiment in creativity! I almost NEVER follow a complete recipe. I am always tweaking something – adding spices, hidden vegetables, etc. I love the freedom, relaxation, and companionship cooking brings. When my kids were home, we cooked together nearly every meal. I challenged them to find a different fruit or vegetable once a month for us to try and they would be responsible for learning about that item and finding a meal to prepare. This made them a part of the entire process and gave them both the tools and love of cooking that I had. Let’s take that walk together here.

Pasta E Fagoli
I love soups with LOTS of herbs and flavors. This one is AMAZING! I can’t tell you how rich this soup tastes and with meat and beans, it is filling too. 30 minute prep time and 30 minute cook time.
Bulgokee
Super Easy! Sweet and Spicy! Bulgokee is my family’s (immediate and extended) favorite meal. Any time I go to someone’s home, I am asked to prepare this delicious meal. Prep time is 45 minutes (30 minute marinade) and 20 minute cook time.

You will find I am all about easy… while I love to cook, I like things to be uncomplicated. No fancy culinary school ideas here! So, when I need some protein, here is one of my go to recipes. A HUGE family favorite.
Breads
Cranberry Orange Scones
I don’t like heavy dense scones so I have modified a light and fluffy biscuit recipe to suit my tastes! You can mold them or dump them on the pan and let them form freestyle. Quick and easy. Prep time 15 minutes. Cook time 16 minutes. And if you aren’t a fan of cranberry orange try some other flavors like lemon blueberry. 🙂
Jolly Roger Orange Bread
This is NOT my recipe and I haven’t tried making it yet, BUT if you know who Jolly Roger’s is, you will appreciate. When we lived in Hawai’i, this was one of my favorites. It is soft, sweet, tangy, and just about perfect. The restaurant is gone now, but the memories live on!

This is a very quick and easy meal. Make it ahead of time and let the flavors meld.

Tropical Fruit Salad
I LOVE fruit. I could eat it all day every day… and there aren’t many I don’t like. While this is called a “tropical” fruit salad, you can add whatever type of fruit you prefer.

Creamy Tortellini Soup
You can whip this up in 30 minutes or so and will find it hearty and filling and filled with flavor. I typically use chicken or mushroom tortellini in mine. It is a house favorite!

Thai Fresh Rolls
These are another of my favorite Thai dishes. They are healthier than fried spring rolls. They can be made vegetarian, or with shrimp or tofu for protein. The peanut dipping sauce is amazing too.
Gluten Free Nut Bars
I have tweaked this recipe over and over. It has become one of the favorites of the extended family and I make them at least once a month for use as a protein bar when I hike. Amazing taste and lots of goodness… ok. I cheated and added chocolate so the others would try them 🙂

Tiramisu
I am giving away all my guilty secrets here, I guess! This is my all time favorite dessert. Nothing beats a GOOD tiramisu. If you’ve never had it, you have been missing out. Chocolate, Cream, Coffee, and cookies! Oh my! Light and delicious. It is sweet, which may surprise many of you since I don’t eat sweet things often, but this is definitely my fav. What do you think?
Baklava
This is probably my kids’ all time favorite dessert! It is just toooo sweet for me these days, but they love it. Here’s to you my beauties!
