

Slow Cooker Cilantro Lime Chicken Tacos
Ingredients
Slow Cooker
- 4 chicken breasts
- 1-1/2 cups corn kernels
- 15 ounce can of black beans drained & rinsed
- 1 red onion sliced
Sauce
- ½ c chicken stock
- 2 cloves garlic
- ¼ t Real salt
- ½ t cumin
- ¼ t ground coriander
- 1 lime zested & juiced
- 2 T honey
- ¼ c packed cilantro leaves
Garnish
- Tortillas taco size
- Romaine lettuce chopped
- Cabbage chopped
- Pepperjack cheese grated
- Greek yogurt
- Grape tomatoes halved
- Cilantro chopped
- Onion chopped
- Radishes chopped

Guacamole
- 3 avocados ripe
- ½ small red onion finely chopped
- 2 roma tomatoes dicked
- 3 T finely chopped fresh cilantro
- 1 jalapeno pepper seeds removed and
- finely diced
- 2 cloves garlic minced
- 1 lime zested and juiced
- ½ t Real salt
Instructions
Slow Cooker
- In the base of a 6-quart slow cooker, place the chicken breasts, corn, and onion. Using an immersion blender, blend the sauce ingredients and pour over the chicken in the slow cooker.
- Cover and cook on low for 4 – 5 hours, until chicken is cooked through and falling apart. Shred chicken, then serve in tortillas topped with your favorite garnish(es).
Guacamole
- Slice the avocados in half, remove the pit, and scoop the meat into a mixing bowl.
- Mash with a fork as chunky or smooth as you prefer. Add the remaining ingredients and mix together. Taste and adjust seasonings appropriately.
