In the base of a 6-quart slow cooker, place the chicken breasts, corn, and onion. Using an immersion blender, blend the sauce ingredients and pour over the chicken in the slow cooker.
Cover and cook on low for 4 – 5 hours, until chicken is cooked through and falling apart. Shred chicken, then serve in tortillas topped with your favorite garnish(es).
Guacamole
Slice the avocados in half, remove the pit, and scoop the meat into a mixing bowl.
Mash with a fork as chunky or smooth as you prefer. Add the remaining ingredients and mix together. Taste and adjust seasonings appropriately.
