Greek Yogurt Chicken Salad
Ingredients
- 2 organic chicken breasts or 4 thighs chopped into 1” cubes (~ 4 cups)
- 1 t pepper
- 1 T lemon juice
- 1 t garlic powder
- 1 T onion powder
- 2 T extra virgin olive oil
- ⅓ c Greek or Icelandic yogurt plain
- ⅓ c celery chopped
- ½ c grapes cut in half
- 1 small apple chopped
- ¼ c nuts chopped
- 2 T lemon juice
- 1 T honey melted
- Salt and pepper to taste
Instructions
- In cast iron skillet, mix first 6 ingredients and let marinade 15 minutes. Cook until all pink is gone from the chicken.
- Cool and then shred the meat. In medium bowl, mix all remaining ingredients.
- Chill for 4 hours before serving.
Notes
Options:
You can replace the apple with cranberries or any other fruit you prefer.
You can use tuna or salmon instead of the chicken. If I’m in a hurry, I use canned chicken.
