Banana Bread
Ingredients
- ½ cup raw sugar
- ½ cup dark brown sugar
- 1 cup olive oil
- 2 eggs
- 2 ½ cup mashed ripe bananas
- 2 tsp vanilla
- 2 tsp cinnamon
- 2 ½ cup flour
- 1 tsp baking soda
- 1 ½ cup chopped walnuts
Self-Rising Flour Blend
- 2 ½ cups white sorghum flour
- 2 ½ cups white rice flour
- 1 cup tapioca starch/flour
- 4 tsp xanthan gum or guar gum
- 8 tsp. baking powder
- 1 tsp salt
Gluten Free Flour Mix
- 2 ½ cups brown or white rice flour
- 1 cup potato starch
- 1 cup tapioca flour
- ¼ cup cornstarch
- ¼ cup bean flour chick-pea or garbanzo bean flour is lighter, fava bean flour is denser
- 2 Tbsp xanthan gum
Instructions
- Preheat oven to 350 degrees. Place oven rack in second to the lowest rung.
- Grease bottoms only of 2 loaf pans. Mix sugars, oil, and eggs together in a large bowl. Add bananas, vanilla, and cinnamon – mix well.
- In medium bowl mix flour and baking soda together. Add 1/2 c at a time to the egg mixture until blended. Fold in nuts (if wanted). Pour into loaf pans.
- Reduce heat to 325 degrees and bake for 1 hour – 1 hour 15 minutes or until top is lightly browned and cracked across the top. A toothpick should come out clean.
Notes
Special Note: I’ve added the flour mixes for gluten free if you want to use instead of wheat flour.
