Banana Bread

Ingredients
  

  • ½ cup raw sugar
  • ½ cup dark brown sugar
  • 1 cup olive oil
  • 2 eggs
  • 2 ½ cup mashed ripe bananas
  • 2 tsp vanilla
  • 2 tsp cinnamon
  • 2 ½ cup flour
  • 1 tsp baking soda
  • 1 ½ cup chopped walnuts

Self-Rising Flour Blend

  • 2 ½ cups white sorghum flour
  • 2 ½ cups white rice flour
  • 1 cup tapioca starch/flour
  • 4 tsp xanthan gum or guar gum
  • 8 tsp. baking powder
  • 1 tsp salt

Gluten Free Flour Mix

  • 2 ½ cups brown or white rice flour
  • 1 cup potato starch
  • 1 cup tapioca flour
  • ¼ cup cornstarch
  • ¼ cup bean flour chick-pea or garbanzo bean flour is lighter, fava bean flour is denser
  • 2 Tbsp xanthan gum

Instructions
 

  • Preheat oven to 350 degrees. Place oven rack in second to the lowest rung.
  • Grease bottoms only of 2 loaf pans. Mix sugars, oil, and eggs together in a large bowl. Add bananas, vanilla, and cinnamon – mix well.
  • In medium bowl mix flour and baking soda together. Add 1/2 c at a time to the egg mixture until blended. Fold in nuts (if wanted). Pour into loaf pans.
  • Reduce heat to 325 degrees and bake for 1 hour – 1 hour 15 minutes or until top is lightly browned and cracked across the top. A toothpick should come out clean.

Notes

Special Note: I’ve added the flour mixes for gluten free if you want to use instead of wheat flour.
