Instructions
Preheat oven to 350 degrees. Place oven rack in second to the lowest rung.
Grease bottoms only of 2 loaf pans. Mix sugars, oil, and eggs together in a large bowl. Add bananas, vanilla, and cinnamon - mix well.
In medium bowl mix flour and baking soda together. Add 1/2 c at a time to the egg mixture until blended. Fold in nuts (if wanted). Pour into loaf pans.
Reduce heat to 325 degrees and bake for 1 hour - 1 hour 15 minutes or until top is lightly browned and cracked across the top. A toothpick should come out clean.

Special Note: I've added the flour mixes for gluten free if you want to use instead of wheat flour.
