Kale Salad

Ingredients
  

Salad

  • 1 lb kale chopped
  • cup dried apricots julienned
  • cup pumpkin seeds
  • 2 oz gouda cheese chopped
  • 1 apple diced
  • Black pepper

Dressing

  • 2 T Apple Cider Vinegar
  • 2 T Lemon Juice
  • 2 T Honey melted
  • ½ t Real Salt

Options

  • Add chicken or tuna for added protein
  • Replace apricots with cranberries or other dried fruit
  • Replace or mix seeds – sesame sunflower, chia, etc.
  • Replace Gouda with Feta or Goat Cheese
  • Add cayenne to dressing
  • Add Dijon mustard to dressing
  • Add chopped nuts

Instructions
 

  • Whisk dressing ingredients together. Build salad as desired. Add dressing right before serving.
