

Kale Salad
Ingredients
Salad
- 1 lb kale chopped
- ⅓ cup dried apricots julienned
- ⅓ cup pumpkin seeds
- 2 oz gouda cheese chopped
- 1 apple diced
- Black pepper
Dressing
- 2 T Apple Cider Vinegar
- 2 T Lemon Juice
- 2 T Honey melted
- ½ t Real Salt
Options
- Add chicken or tuna for added protein
- Replace apricots with cranberries or other dried fruit
- Replace or mix seeds – sesame sunflower, chia, etc.
- Replace Gouda with Feta or Goat Cheese
- Add cayenne to dressing
- Add Dijon mustard to dressing
- Add chopped nuts
Instructions
- Whisk dressing ingredients together. Build salad as desired. Add dressing right before serving.
