Quesadillas
Ingredients
Base Ingredients
- 2 burrito size tortillas Corn / Flour / Gluten-Free
- ½ c feta cheese
- 1 container hummus your favorite flavor
Build Ingredients
- caramelized onions / mushrooms
- fresh baby spinach leaves
- fresh cilantro chopped
- 1 avocado sliced
- fresh ground pepper
- cayenne
Instructions
- In an omelet pan lay a tortilla shell, spread entire shell with a light touch of hummus and your choice of seasonings (basil, cilantro, oregano, salt, or pepper), cover it with feta cheese.
- Cover the cheese with your choice of fillings – don’t be limited by my list above – get creative and let me know your favorites!
- Turn on heat to medium.
- Cover the other tortilla shell with a light touch of hummus and lay on top of what you built in the pan. Your tortilla will shrink as it cooks. Watch carefully. When ready to flip, lay a plate over the quesadilla and turn the pan over then slide it back into the pan to brown. Remove from heat and cut into 1/6s.
