In an omelet pan lay a tortilla shell, spread entire shell with a light touch of hummus and your choice of seasonings (basil, cilantro, oregano, salt, or pepper), cover it with feta cheese.

Turn on heat to medium.
Cover the other tortilla shell with a light touch of hummus and lay on top of what you built in the pan. Your tortilla will shrink as it cooks. Watch carefully. When ready to flip, lay a plate over the quesadilla and turn the pan over then slide it back into the pan to brown. Remove from heat and cut into 1/6s.
